Oven Lemon Garlic Ocean Perch

Thin perch fillets bake with lemon juice, garlic salt, paprika, and dried parsley or dill. Check them early to keep the fish moist.
Ingredients
- —1.2 lb ocean perch fillets
- —1 tbsp olive oil
- —Juice of 1/2 lemon
- —1/2 tsp garlic salt
- —1/2 tsp paprika
- —1/4 tsp black pepper
- —1/2 tsp dried parsley or dill
Notes
Regular Bake at 425°F works well for these delicate fillets. For Convection Bake, use 400°F and begin checking at about 10 minutes. Avoid Convection Roast, which can dry out thin perch quickly. The 30-minute total is an estimate for a 15-minute oven preheat, with 10 minutes of active prep during it, followed by up to 15 minutes baking. Optional broiling adds 30 to 60 seconds.
Instructions
- Preheat the oven to 425°F on regular Bake. Line a baking sheet with parchment paper.
- Pat the perch dry and arrange the fillets in a single layer on the sheet, leaving a little space between them.
- Drizzle with olive oil and lemon juice. Sprinkle evenly with garlic salt, paprika, black pepper, and parsley or dill.
- Bake on the middle rack for about 12 to 15 minutes, depending on thickness. Remove when the fish flakes easily with a fork and reaches 145°F internally.
- For a little color, optionally transfer the fish to a lightly oiled, broiler-safe pan without parchment and broil for 30 to 60 seconds. Watch closely.
