Pellet Grill Ocean Perch

Ocean perch cooks gently on foil or a grill mat, with smoked paprika, garlic salt, and a squeeze of lemon.
Ingredients
- —1.2 lb ocean perch fillets
- —1 tbsp olive oil
- —1/2 tsp garlic salt
- —1/2 tsp smoked paprika
- —1/4 tsp black pepper
- —Lemon wedges, for serving
Notes
Apple or cherry pellets give perch a mild smoke flavor. Remove individual fillets as they finish so the thinner pieces don't dry out. Timing is estimated: 10 minutes of active prep during a 15-minute grill preheat, then up to 18 minutes cooking. Allow longer if your grill heats slowly.
Instructions
- Preheat the pellet grill to 375°F.
- Pat the perch dry. Arrange the fillets on heavy-duty aluminum foil or a grill mat to keep the delicate fish from falling through the grates.
- Brush with olive oil, then season evenly with garlic salt, smoked paprika, and black pepper.
- Place the fish, still on the foil or mat, on the grill. Cook for about 12 to 18 minutes, depending on thickness. Begin checking thinner pieces at 10 to 12 minutes.
- Remove each fillet as soon as it flakes easily and reaches 145°F internally. Squeeze fresh lemon over the fish just before serving.
